Roasts
There are roasts of varying, more sophisticated names, but those names tend to
vary from one part of the country to the next; or they vary with the background of
the customer. Our Roastmaster has 20 years of experience that “tells” him -
whereas the rest of us have a set of color tiles that will helps us communicate
with him and with you about the proper roast, in the event you feel one of the
descriptions below is an oversimplified representation.
Light American
A distinct light brown, maybe on some beans an insignificant hint of yellow, but not
greenish; no glaze; and with a definite dry look. Sometimes just called, “Light.”
Full City
A very strong brown, no glaze, dry, with no oily look. Sometimes called, “Medium.”
Vienna
The darkest of brown, but no black, no oily appearance.
Italian
A “just barely black’ color with no oily look. Sometimes called, “Dark.”
French
Black with some surface oil; just through the “1st Crack.”
Double French
Very black, very oily, through its “2nd Crack.”
